  • 1 tbsp olive oil
  • 1 lb smoked sausage (kielbasa, or similar), sliced into 1/2-inch rounds
  • 1 small head green cabbage (about 2 lbs), cored and chopped into 1-inch pieces
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken or vegetable broth
  • 1 tbsp apple cider vinegar
  • 1 tsp caraway seeds (optional, but recommended)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced sausage and cook until browned and lightly crispy, about 5-7 minutes. Remove sausage from the skillet with a slotted spoon and set aside, leaving any rendered fat in the pan.

    Add sliced onion to the skillet and cook until softened, about 3-5 minutes, scraping up any browned bits from the bottom of the pan. Add minced garlic and cook for another minute until fragrant.

  3. Step 3

    Add chopped cabbage to the skillet. Cook, stirring occasionally, until the cabbage starts to soften and wilt, about 5-7 minutes. It's okay if some pieces get a little browned!

  4. Step 4

    Pour in the chicken broth and apple cider vinegar. Stir in the caraway seeds (if using). Season generously with salt and pepper. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 8-10 minutes, or until cabbage is tender-crisp.

  5. Step 5

    Return the cooked sausage to the skillet and stir to combine. Cook for an additional 2-3 minutes, just to heat the sausage through.

  6. Step 6

    Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.

  • For a spicier kick, use a spicy smoked sausage or add a pinch of red pepper flakes with the garlic.
