  • 8 oz egg noodles
  • 1 tbsp olive oil
  • 1 lb ground Italian sausage (mild or hot)
  • 1 small head green cabbage, cored and shredded
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tsp caraway seeds (optional, but recommended)
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Preparation

  1. Step 1

    Cook egg noodles according to package directions until al dente. Drain and set aside.

  2. Step 2

    While noodles cook, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat and remove sausage from the skillet, setting it aside.

    Add diced onion to the same skillet and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.

    Add shredded cabbage to the skillet and cook, stirring occasionally, until softened, about 8-10 minutes. It will seem like a lot at first, but it will cook down.

    Stir in chicken broth, apple cider vinegar, and caraway seeds (if using). Bring to a simmer and cook for 5 minutes.

  6. Step 6

    Return the cooked sausage and drained egg noodles to the skillet. Toss everything together until well combined and heated through. Season with salt and pepper to taste.

    Serve hot, garnished with fresh chopped parsley.
