  • 1 lb Italian sausage (mild or hot), casings removed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 (15 oz) cans cannellini beans, rinsed and drained
  • 1.5 cups chicken broth
  • 1/2 tsp dried rosemary
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups fresh spinach
  • Salt and black pepper to taste
  • Crusty bread, for serving (optional)

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Drain off any excess fat.
