- 1 red bell pepper, cored and sliced
- 1 green bell pepper, cored and sliced
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh basil or parsley, chopped (for garnish, optional)

Step 1
Heat olive oil in a large skillet (oven-safe if you want to finish in the oven, but not necessary) over medium-high heat. Add the sausage and cook, breaking it up with a spoon if using ground, until browned and cooked through. Remove sausage from the skillet and set aside, leaving a little fat in the pan.

Add the onion, red bell pepper, and green bell pepper to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the vegetables start to soften and get a little color.

Stir in the minced garlic and cook for another minute until fragrant.

Return the cooked sausage to the skillet. Add the diced tomatoes (undrained), Italian seasoning, salt, and pepper. Stir everything together well.
