- 1 red bell pepper, cored and chopped

- 8 large eggs
- 1/2 cup milk or half-and-half
- 1/2 cup shredded cheddar cheese (or mozzarella/Monterey Jack)
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: fresh chives or parsley, chopped, for garnish
Preparation
Step 1
Preheat oven to 375°F (190°C). If your skillet is not oven-safe, have an oven-safe pie dish or cast iron pan ready.

Heat olive oil in a 10-inch oven-safe, non-stick skillet over medium-high heat. Add ground sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease.

Add chopped onion and bell peppers to the skillet with the sausage. Cook, stirring occasionally, until vegetables are softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute until fragrant. Spread the mixture evenly in the skillet.

In a large bowl, whisk together eggs, milk (or half-and-half), salt, and pepper until well combined and slightly frothy. Stir in the shredded cheddar cheese.

Pour the egg mixture evenly over the sausage and vegetable mixture in the skillet. Sprinkle with grated Parmesan cheese.
