- 1 lb smoked sausage (kielbasa or similar), sliced into 1/2-inch thick rounds
- 1/2 head green cabbage (about 6 cups), thinly sliced or chopped
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup chicken broth or water
- 1 tbsp soy sauce (low sodium preferred)
- 1 tsp apple cider vinegar
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- Optional: Red pepper flakes for a kick
- Fresh parsley or dill, chopped, for garnish
Preparation
Step 1
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced smoked sausage and cook for 5-7 minutes, stirring occasionally, until browned and slightly crispy. Remove sausage from the skillet and set aside, leaving any rendered fat in the pan.
Step 2
Add the sliced onion to the skillet and cook for 3-5 minutes until softened and translucent, scraping up any browned bits from the bottom of the pan. Stir in the minced garlic and dried thyme (and red pepper flakes if using), and cook for 1 minute until fragrant.
Step 3
Add the thinly sliced cabbage to the skillet. Pour in the chicken broth (or water), soy sauce, and apple cider vinegar. Stir well to combine. Cover the skillet and let the cabbage steam for 5-7 minutes, stirring once halfway, until it has softened to your desired tenderness.
Step 4
Return the cooked sausage to the skillet with the cabbage. Toss everything together to combine and heat through for 1-2 minutes. Taste and adjust seasoning with salt and black pepper as needed.
Step 5
Serve hot, garnished with fresh parsley or dill. This dish is great on its own or alongside a scoop of mashed potatoes.
