  • ½ cup chicken or vegetable broth
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • ½ tsp caraway seeds (optional, but recommended!)
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove sausage from skillet and set aside, reserving any rendered fat in the pan.

    Add chopped cabbage, red bell pepper, and onion to the skillet. Cook, stirring occasionally, for 8-10 minutes, or until vegetables begin to soften and lightly char.

    Stir in minced garlic, caraway seeds (if using), and cook for 1 minute more until fragrant. Pour in chicken broth, apple cider vinegar, and Dijon mustard. Bring to a simmer, scraping up any browned bits from the bottom of the pan.

    Return the cooked sausage to the skillet. Stir everything together. Reduce heat to medium-low, cover, and simmer for 10-15 minutes, or until cabbage is tender to your liking. Season with salt and black pepper to taste.
