  • 1 lb Italian sausage (mild or hot), casings removed
  • 1 large head of broccoli, cut into bite-sized florets
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (10.75 oz) can cream of mushroom soup
  • 1/2 cup milk (any kind)
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon black pepper
  • Salt to taste (be mindful of sausage and soup saltiness)
  • 1 cup shredded cheddar cheese, or Italian blend
  • Optional: red pepper flakes for a kick

Preparation

  1. Step 1

    Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

    In a large skillet over medium-high heat, add olive oil. Cook Italian sausage, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease. Transfer sausage to the prepared baking dish.

    Add chopped broccoli florets and chopped onion to the same skillet (no need to clean it). Sauté for 5-7 minutes, until broccoli is tender-crisp and onion is softened. Stir in minced garlic and cook for another minute until fragrant. Transfer broccoli mixture to the baking dish with the sausage.

    In a medium bowl, whisk together cream of mushroom soup, milk, Italian seasoning, pepper, and a pinch of salt (remembering the sausage and soup are already salty). Pour this mixture evenly over the sausage and broccoli in the baking dish. Stir gently to combine.

  5. Step 5

    Sprinkle shredded cheese evenly over the top. Bake for 20-25 minutes, or until bubbling and the cheese is melted and lightly golden. If desired, broil for the last 1-2 minutes for extra browning on the cheese. Let stand for a few minutes before serving.
