Ingredients

Yield: 4 servings

Pork & Veggies

  • 1 lb pork loin or tenderloin, thinly sliced against the grain
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 8 oz plain stir-fry noodles (ramen without seasoning, lo mein, or spaghetti)
  • 1 tbsp olive oil or vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 head broccoli, cut into small florets
  • 2 carrots, julienned or thinly sliced
  • 3 green onions, sliced (white and green parts separated)

Stir-Fry Sauce

  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce (optional, or more soy sauce)
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp grated fresh ginger
  • 2 cloves garlic, minced

Preparation

  1. Step 1

In a medium bowl, combine the thinly sliced pork with cornstarch and 1 tbsp soy sauce. Toss to coat thoroughly. Set aside.

  2. Step 2

Cook noodles according to package directions. Drain, rinse with cold water, and toss with 1 tbsp sesame oil to prevent sticking. Set aside.

  3. Step 3

Prepare the sauce: In a small bowl, whisk together 1/4 cup soy sauce, oyster sauce (if using), rice vinegar, sugar, grated ginger, and minced garlic. Set aside.

  4. Step 4

Heat olive oil in a large wok or skillet over high heat until shimmering. Add the marinated pork in a single layer and stir-fry for 2-3 minutes, until browned and cooked through. Remove pork from the pan and set aside.

  5. Step 5

Add red bell pepper, broccoli florets, and carrots to the hot wok. Stir-fry for 3-5 minutes until vegetables are tender-crisp. Add the white parts of the green onions and stir-fry for 1 minute more.

  6. Step 6

Return the cooked pork to the wok. Add the cooked noodles and pour in the prepared stir-fry sauce. Toss everything together vigorously for 1-2 minutes, ensuring the noodles and ingredients are well coated and heated through. Remove from heat, stir in the green parts of the green onions.

  7. Step 7

Serve hot and enjoy your homemade stir-fry!

Tips

  • To get super thin pork slices, partially freeze the pork loin for 20-30 minutes before slicing.
  • Don't overcrowd the wok during stir-frying; cook in batches if necessary to ensure ingredients brown instead of steam.
  • Feel free to experiment with other vegetables like snap peas, mushrooms, or bok choy.
