- 1 lb pork loin or tenderloin, thinly sliced against the grain
- 1 tbsp cornstarch
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 8 oz plain stir-fry noodles (ramen without seasoning, lo mein, or spaghetti)
- 1 tbsp olive oil or vegetable oil
- 1 red bell pepper, thinly sliced
- 1 head broccoli, cut into small florets
- 2 carrots, julienned or thinly sliced
- 3 green onions, sliced (white and green parts separated)
Stir-Fry Sauce
- 1/4 cup soy sauce
- 2 tbsp oyster sauce (optional, or more soy sauce)
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
Preparation
Step 1
In a medium bowl, combine the thinly sliced pork with cornstarch and 1 tbsp soy sauce. Toss to coat thoroughly. Set aside.

Cook noodles according to package directions. Drain, rinse with cold water, and toss with 1 tbsp sesame oil to prevent sticking. Set aside.

Prepare the sauce: In a small bowl, whisk together 1/4 cup soy sauce, oyster sauce (if using), rice vinegar, sugar, grated ginger, and minced garlic. Set aside.

Heat olive oil in a large wok or skillet over high heat until shimmering. Add the marinated pork in a single layer and stir-fry for 2-3 minutes, until browned and cooked through. Remove pork from the pan and set aside.

Add red bell pepper, broccoli florets, and carrots to the hot wok. Stir-fry for 3-5 minutes until vegetables are tender-crisp. Add the white parts of the green onions and stir-fry for 1 minute more.

Return the cooked pork to the wok. Add the cooked noodles and pour in the prepared stir-fry sauce. Toss everything together vigorously for 1-2 minutes, ensuring the noodles and ingredients are well coated and heated through. Remove from heat, stir in the green parts of the green onions.
