It's a rustic, flavorful dish that comes together in one pan, making cleanup a breeze. With savory ground pork and tender, slightly caramelized cabbage, it's a wonderfully comforting and budget-friendly weeknight option that's surprisingly delicious.
Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb ground pork
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 head green cabbage (about 2 lbs), cored and thinly sliced
- 1/2 cup chicken broth
- 1 tbsp apple cider vinegar
- 1 tsp dried caraway seeds (optional, but recommended)
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat and set the pork aside on a plate.
Step 2
Add chopped onion to the same skillet (add a touch more oil if needed) and cook until softened, about 3-5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
Step 3
Add the thinly sliced cabbage to the skillet. It will look like a lot, but it will cook down significantly. Add the chicken broth, apple cider vinegar, and caraway seeds (if using). Season with salt and pepper.
Step 4
Cover the skillet and cook for 8-10 minutes, stirring occasionally, until the cabbage has softened. Uncover and continue to cook, stirring occasionally, for another 5-7 minutes, allowing some of the liquid to evaporate and the cabbage to get slightly caramelized.
Step 5
Return the cooked ground pork to the skillet with the cabbage. Stir to combine and heat through for 1-2 minutes.
Step 6
Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
Tips
- For a richer flavor, you can swap chicken broth for beef broth.
- Add a chopped apple along with the onion for a touch of sweetness and tartness.
- Serve this skillet meal on its own, or with a side of crusty bread or mashed potatoes.
