Hearty Pork and Cabbage Skillet

Sometimes the simplest meals are the most satisfying, and this Hearty Pork and Cabbage Skillet is a prime example! It's a rustic, flavorful dish that comes together in one pan, making cleanup a breeze. With savory ground pork and tender, slightly caramelized cabbage, it's a wonderfully comforting and budget-friendly weeknight option that's surprisingly delicious.

Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 lb ground pork
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 head green cabbage (about 2 lbs), cored and thinly sliced
  • 1/2 cup chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tsp dried caraway seeds (optional, but recommended)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat and set the pork aside on a plate.

  2. Step 2

Add chopped onion to the same skillet (add a touch more oil if needed) and cook until softened, about 3-5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.

  3. Step 3

Add the thinly sliced cabbage to the skillet. It will look like a lot, but it will cook down significantly. Add the chicken broth, apple cider vinegar, and caraway seeds (if using). Season with salt and pepper.

  4. Step 4

Cover the skillet and cook for 8-10 minutes, stirring occasionally, until the cabbage has softened. Uncover and continue to cook, stirring occasionally, for another 5-7 minutes, allowing some of the liquid to evaporate and the cabbage to get slightly caramelized.

  5. Step 5

Return the cooked ground pork to the skillet with the cabbage. Stir to combine and heat through for 1-2 minutes.

  6. Step 6

Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.

Tips

  • For a richer flavor, you can swap chicken broth for beef broth.
  • Add a chopped apple along with the onion for a touch of sweetness and tartness.
  • Serve this skillet meal on its own, or with a side of crusty bread or mashed potatoes.
