- 1/4 cup cotija cheese, crumbled (or feta/Parmesan)
Creamy Dressing
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 2 tbsp fresh lime juice
- 1 clove garlic, minced
- 1/2 tsp chili powder
- 1/4 tsp smoked paprika
- Pinch of cayenne pepper (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper

- Extra lime wedges
- Extra cilantro

Preparation
Step 1
Cook pasta according to package directions until al dente. Drain and rinse with cold water to stop cooking and cool it down. Set aside.

If using fresh or frozen corn, you can quickly sauté it in a dry skillet over medium-high heat for 5-7 minutes, stirring occasionally, until it gets a slight char. Let cool.
