- 1 lb Italian sausage (pork or chicken, mild or hot), casings removed
- 1 medium yellow onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup brown or green lentils, rinsed
- 4 cups chicken or vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 5 oz fresh spinach
- Salt and black pepper to taste
- Parmesan cheese, for serving (optional)
Preparation
Step 1
Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary, then remove sausage and set aside.
Step 2
Add chopped onion and diced carrots to the skillet. Cook, stirring occasionally, until vegetables begin to soften, about 5-7 minutes. Stir in minced garlic, dried thyme, and dried rosemary, and cook for 1 minute more until fragrant.
Step 3
Add the rinsed lentils, chicken or vegetable broth, and diced tomatoes (with their juices) to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender, stirring occasionally.
Step 4
Return the cooked sausage to the skillet. Stir in the fresh spinach and cook until just wilted, about 2-3 minutes. Taste and season with salt and black pepper as needed.
Step 5
Serve hot, topped with grated Parmesan cheese if desired. This dish is hearty enough on its own or pairs well with crusty bread.
