Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb chicken sausage, casing removed and crumbled (or sliced)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (8 oz) can tomato sauce
- 1/2 cup chicken broth
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 1 (16 oz) package potato gnocchi (shelf-stable)
- 5 oz fresh spinach
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and black pepper to taste
Preparation
Step 1
Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add the chicken sausage and cook, breaking it up with a spoon, until browned. Remove sausage from the pan and set aside, draining most of the fat.
Step 2
Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic and cook for another minute until fragrant.
Step 3
Pour in the diced tomatoes, tomato sauce, chicken broth, Italian seasoning, and red pepper flakes (if using). Bring to a simmer. Season with salt and pepper.
Step 4
Add the gnocchi directly to the simmering sauce and cook for 5-7 minutes, stirring occasionally, until the gnocchi are tender and float to the top.
Step 5
Return the cooked sausage to the skillet. Stir in the fresh spinach a handful at a time, allowing it to wilt down. Stir in the Parmesan cheese until melted and combined.
Step 6
Serve hot, topped with additional Parmesan cheese if desired.
Tips
- If your skillet isn't oven-safe, you can transfer the mixture to a baking dish before adding cheese and broiling, but it's not strictly necessary.
- Don't worry if the gnocchi seem a bit firm when you add them; they will plump up nicely in the sauce.
- Feel free to add other vegetables like bell peppers or mushrooms along with the onion for extra nutrition and flavor.
