  • 1 lb chicken sausage, casing removed and crumbled (or sliced)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 1/2 cup chicken broth
  • 1 tsp dried Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 1 (16 oz) package potato gnocchi (shelf-stable)
  • 5 oz fresh spinach
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add the chicken sausage and cook, breaking it up with a spoon, until browned. Remove sausage from the pan and set aside, draining most of the fat.

    Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic and cook for another minute until fragrant.

    Pour in the diced tomatoes, tomato sauce, chicken broth, Italian seasoning, and red pepper flakes (if using). Bring to a simmer. Season with salt and pepper.

    Add the gnocchi directly to the simmering sauce and cook for 5-7 minutes, stirring occasionally, until the gnocchi are tender and float to the top.

    Return the cooked sausage to the skillet. Stir in the fresh spinach a handful at a time, allowing it to wilt down. Stir in the Parmesan cheese until melted and combined.

    Serve hot, topped with additional Parmesan cheese if desired.
