  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 medium bell pepper (any color), diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1/2 cup chicken broth
  • 2 tbsp chopped fresh cilantro (for garnish, optional)
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.

    Add diced sweet potatoes, bell pepper, and onion to the skillet. Cook, stirring occasionally, for 8-10 minutes, or until vegetables begin to soften and lightly brown.

    Stir in minced garlic, smoked paprika, chili powder, and cumin. Cook for 1 minute until fragrant.

  4. Step 4

    Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Return chicken to the skillet. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-12 minutes, or until sweet potatoes are tender and chicken is cooked through.

  5. Step 5

    Remove lid, increase heat slightly if needed, and cook for another 2-3 minutes to allow any remaining liquid to reduce slightly. Season with salt and pepper to taste.

  6. Step 6

    Garnish with fresh cilantro, if using, and serve hot.

  • For a bit of heat, add a pinch of cayenne pepper with the other spices.
  • If you prefer, you can use regular potatoes instead of sweet potatoes.
