  • 1 small yellow onion, thinly sliced
  • 2 Gala or Honeycrisp apples, cored and sliced (skin on is fine)
  • 1 tsp dried thyme
  • 1/2 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • Salt and fresh black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Pat the sliced pork tenderloin dry with paper towels. Season generously with salt and pepper.
