For the Sauce
- 1/4 cup soy sauce (or tamari for GF)
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar

- 1 clove garlic, minced

- 1 tbsp cornstarch
- 2 tbsp water
For the Stir-Fry
- 8 oz thin pork stir-fry strips or thinly sliced pork tenderloin
- 1 tbsp olive oil or vegetable oil
- 1 small onion, thinly sliced
- 1 cup broccoli florets, small
- 1 red bell pepper, thinly sliced
- 8 oz cooked lo mein or ramen noodles (or desired stir-fry noodles)
- Optional: sesame seeds, chopped green onions for garnish
Preparation
Step 1
First, prepare your sauce: In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. In a separate tiny bowl, combine cornstarch and water to create a slurry. Add the slurry to the sauce mixture and whisk well. Set aside.
Step 2
Heat olive oil in a large wok or skillet over medium-high heat. Add the pork strips and cook for 3-4 minutes, stirring frequently, until browned and cooked through. Remove pork from the skillet and set aside.
Step 3
Add the sliced onion, broccoli florets, and red bell pepper to the same skillet. Stir-fry for 3-5 minutes, until the vegetables are crisp-tender. If needed, add a splash of water to help them steam slightly.
Step 4
Return the cooked pork to the skillet. Add the cooked noodles and pour the prepared sauce over everything. Toss constantly for 1-2 minutes, allowing the sauce to thicken and coat all the ingredients. The sauce will become glossy.
Step 5
Remove from heat. Garnish with sesame seeds and chopped green onions, if desired. Serve hot and enjoy your lightning-fast stir-fry!
