  • 1 tbsp vegetable oil
  • 1 lb ground pork
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated (about 1 tbsp)
  • 1/2 head green cabbage (about 6 cups), thinly sliced
  • 4 oz dried ramen noodles (without seasoning packets), or thin spaghetti, broken into smaller pieces
  • 2 cups chicken or vegetable broth

For the Sauce

  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce (or hoisin sauce for vegetarian)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp cold water (slurry)

For Garnish (Optional)

  • Sliced green onions
  • Sesame seeds

Preparation

  1. Step 1

    In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, brown sugar, and sesame oil. Set aside.

  2. Step 2

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

  3. Step 3

    Add chopped onion to the skillet and cook for 3-4 minutes until softened. Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.

    Add thinly sliced cabbage to the skillet. Cook, stirring frequently, until the cabbage begins to wilt, about 5-7 minutes. It's okay if it's still a bit crisp.

    Pour in the chicken broth and bring to a simmer. Add the dried ramen noodles (or broken spaghetti). Cover the skillet and cook for 3-5 minutes, or until the noodles are mostly tender, stirring once or twice.

  6. Step 6

    Uncover, stir in the prepared sauce mixture. Then stir in the cornstarch slurry and cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the noodles and pork mixture. Serve immediately, garnished with sliced green onions and sesame seeds if desired.

  • Don't overcook the cabbage; a little crunch adds great texture to the dish.
