  • 1.5 lbs small red potatoes, quartered
  • 12 oz fresh green beans, trimmed
  • 3 tbsp olive oil, divided
  • 1 tbsp lemon juice
  • 1 tsp dried dill
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and freshly ground black pepper to taste
  • Fresh dill or parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

    In a large bowl, toss the quartered potatoes with 2 tablespoons of olive oil, 1/2 tsp garlic powder, 1/4 tsp paprika, salt, and pepper. Spread them in a single layer on one half of the prepared baking sheet.

    Roast the potatoes for 15 minutes.

    While potatoes roast, pat fish fillets dry with paper towels. In a small bowl, whisk together the remaining 1 tablespoon olive oil, lemon juice, dried dill, remaining 1/2 tsp garlic powder, remaining 1/4 tsp paprika, salt, and pepper.

    After the potatoes have roasted for 15 minutes, remove the baking sheet from the oven. Arrange the trimmed green beans on the other half of the baking sheet. Place the fish fillets among the vegetables. Drizzle the lemon-dill mixture evenly over the fish.

    Return the baking sheet to the oven and roast for another 10-15 minutes, or until the fish is cooked through and flakes easily with a fork, and the vegetables are tender-crisp. (Cooking time for fish will vary depending on thickness.)
