Who says fish tacos have to be fancy? We're taking a humble pantry staple – fish sticks! – and elevating them into a fun, flavor-packed weeknight meal. These Golden Fish Stick Tacos with Slaw are incredibly easy, delightfully crispy, and sure to be a family favorite.
Ingredients
Yield: 4 servings
Main
- 18-24 frozen fish sticks
- 8-12 small flour or corn tortillas
- 1 tbsp olive oil (for warming tortillas)
- Lime wedges, for serving
For the Slaw
- 3 cups pre-shredded coleslaw mix (green and red cabbage, carrots)
- 1/2 cup mayonnaise
- 2 tbsp lime juice
- 1 tbsp chopped fresh cilantro
- 1/2 tsp chili powder
- Pinch of sugar
- Salt and freshly ground black pepper to taste
Preparation
Step 1
Preheat oven or air fryer according to fish stick package directions. Cook fish sticks until golden brown and crispy.
Step 2
While fish sticks cook, prepare the slaw: In a medium bowl, whisk together mayonnaise, lime juice, cilantro, chili powder, sugar, salt, and pepper. Add coleslaw mix and toss to combine. Set aside.
Step 3
Warm tortillas: Heat olive oil in a large skillet over medium-high heat. Quickly warm each tortilla for 30 seconds per side, until pliable and lightly browned. Alternatively, wrap tortillas in foil and warm in the oven for 10 minutes, or microwave briefly.
Step 4
Assemble tacos: Place 2-3 cooked fish sticks in each warmed tortilla. Top with a generous spoonful of the prepared slaw.
Step 5
Serve immediately with extra lime wedges for squeezing.
Tips
- Add a drizzle of your favorite hot sauce or a sprinkle of pickled jalapeños for extra zing.
- Swap out the cilantro for fresh parsley if you're not a fan.
- For an extra layer of flavor, toast your tortillas directly over a gas flame for a few seconds per side.
