It's incredibly versatile, super easy, and guaranteed to become a family favorite.
Ingredients
Yield: 2 servings
Main
- 2 (6 oz) white fish fillets (cod, tilapia, haddock, or halibut)
- 1 large head of broccoli, cut into florets
- 1 red bell pepper, sliced
- 1/2 red onion, thinly sliced
- 2 tbsp olive oil
- 1 tsp dried dill (or 2 tsp fresh, chopped)
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1/2 lemon, thinly sliced, plus extra for serving
- Fresh parsley, chopped (for garnish, optional)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
Step 2
In a large bowl, combine the broccoli florets, sliced bell pepper, and red onion. Drizzle with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Toss well to coat.
Step 3
Spread the seasoned vegetables in a single layer on one side of the prepared sheet pan.
Step 4
Bake for 10-12 minutes, or until the vegetables are starting to soften.
Step 5
While the vegetables are roasting, pat the fish fillets dry with paper towels. Drizzle the fish with the remaining 1 tablespoon of olive oil, dried dill, a pinch of salt, and pepper. Gently rub the seasonings into the fish.
Step 6
Remove the sheet pan from the oven. Gently push the vegetables to one side and place the seasoned fish fillets on the other side. Arrange lemon slices over the fish.
Step 7
Return the sheet pan to the oven and bake for another 8-12 minutes, or until the fish is opaque and flakes easily with a fork (cooking time will vary based on fish thickness).
Step 8
Serve immediately with extra lemon wedges and a sprinkle of fresh parsley, if desired. Enjoy your simple, delicious meal!
Tips
- Don't overcrowd the sheet pan; use two pans if necessary to ensure vegetables and fish cook evenly and get good color.
- Adjust baking times based on the thickness of your fish. Thinner fillets will cook faster.
- Feel free to swap out the vegetables for other quick-cooking options like asparagus, cherry tomatoes, or zucchini.
