- 2 (6 oz) white fish fillets (cod, tilapia, or snapper work well)
- 1 cup mixed chopped bell peppers (any color) and zucchini
- 1/2 lemon, thinly sliced
- 2 tbsp olive oil
- 1 tbsp fresh dill or parsley, chopped
- 1 clove garlic, minced
- Salt and black pepper to taste
Preparation
Step 1
Preheat oven to 400°F (200°C). Tear off two large (12x18 inch) pieces of heavy-duty aluminum foil.
Step 2
In a small bowl, whisk together olive oil, chopped dill/parsley, minced garlic, salt, and pepper.
Step 3
Place one fish fillet in the center of each foil piece. Divide the mixed vegetables evenly around the fish. Top each fish fillet with 2-3 lemon slices.
Step 4
Drizzle the olive oil and herb mixture evenly over the fish and vegetables in each packet.
Step 5
Bring the long sides of the foil together over the fish and fold down several times to seal. Crimp the short ends tightly to create a sealed packet, leaving a little room for steam to circulate.
Step 6
Place packets on a baking sheet. Bake for 15-18 minutes, or until fish is opaque and flakes easily with a fork, and vegetables are tender. Cooking time may vary slightly based on fish thickness.
Step 7
Carefully open packets (watch for steam!) and serve directly from the foil or transfer to plates. A squeeze of fresh lemon juice at the end is always a good idea!
Tips
- These packets are also fantastic on the grill! Cook over medium heat for 10-15 minutes, flipping once, or until fish is cooked through.
- Feel free to customize your veggies! Thinly sliced potatoes (add a few minutes to cook time), bell peppers, corn, or cherry tomatoes all work well.
