- 1 lb firm white fish (such as cod, halibut, or tilapia), cooked and flaked
- 1/2 cup breadcrumbs, plus 1/4 cup for coating
- 1 large egg, lightly beaten
- 1/4 cup finely chopped fresh parsley
- 2 tbsp finely chopped fresh dill
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 1/4 cup finely diced red onion or shallot (optional)
- Salt and black pepper to taste
- 2-3 tbsp olive oil, for frying
- Lemon wedges and tartar sauce or Greek yogurt, for serving
Preparation
Step 1
If using raw fish, steam, poach, or bake it until cooked through (around 10-12 minutes at 375°F/190°C). Allow it to cool slightly, then flake it into small pieces with a fork, checking for any bones.
Step 2
In a medium bowl, combine the flaked fish, 1/2 cup breadcrumbs, beaten egg, parsley, dill, Dijon mustard, lemon juice, and red onion (if using). Season generously with salt and black pepper. Mix gently until just combined; do not overmix.
Step 3
Divide the mixture into 8 equal portions and shape them into patties, about 1-inch thick. Place the remaining 1/4 cup breadcrumbs on a shallow plate and gently press each patty into the breadcrumbs to coat both sides.
Step 4
Heat olive oil in a large skillet over medium heat. Once hot, carefully place the fish patties in the skillet, being careful not to overcrowd.
Step 5
Cook for 4-6 minutes per side, or until golden brown and crispy, and heated through. Remove from the skillet and place on a wire rack lined with paper towels to drain any excess oil.
Step 6
Serve the golden fish patties immediately with lemon wedges and your favorite tartar sauce or a dollop of Greek yogurt.
Tips
- Leftover cooked salmon or canned salmon (drained well) also works beautifully in this recipe.
- For a gluten-free version, use gluten-free breadcrumbs.
- If the patties feel too soft to handle, chill them in the refrigerator for 15-20 minutes before frying.
