Ingredients
Yield: 4 servings
For the Fries
- 1.5 lbs russet potatoes, scrubbed and cut into ½-inch thick fries
- 2 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp paprika
- ¼ tsp salt
- ⅛ tsp black pepper
For the Fish
- 4 (5-6 oz) white fish fillets (cod, haddock, tilapia), patted dry
- 2 tbsp olive oil
- ½ cup panko breadcrumbs
- ¼ cup all-purpose flour
- 1 tsp Old Bay seasoning
- ½ tsp salt
- ¼ tsp black pepper
For Serving
- Lemon wedges
- Tartar sauce or malt vinegar
Preparation
Step 1
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Step 2
Prepare the fries: In a large bowl, toss potato fries with 2 tbsp olive oil, garlic powder, paprika, ¼ tsp salt, and ⅛ tsp pepper. Spread in a single layer on one half of the prepared baking sheet.
Step 3
Bake for 15 minutes, flipping halfway through.
Step 4
While fries bake, prepare the fish: In a shallow dish, combine panko breadcrumbs, flour, Old Bay seasoning, ½ tsp salt, and ¼ tsp pepper. Drizzle fish fillets with 2 tbsp olive oil, then dredge each fillet in the breadcrumb mixture, pressing gently to coat evenly.
Step 5
After the fries have baked for 15 minutes, carefully move them to one side of the baking sheet. Place the breaded fish fillets on the other half of the baking sheet, ensuring they are in a single layer and not overlapping.
Step 6
Return the baking sheet to the oven and bake for another 10-12 minutes, or until fish is opaque and flaky, and the fries are golden brown and crispy. (Cooking time may vary based on fish thickness).
Step 7
Serve immediately with lemon wedges, tartar sauce, or malt vinegar.
Tips
- For extra crispy fries, soak them in cold water for 30 minutes before seasoning and baking, then pat very dry.
- Don't overcrowd the baking sheet; if you have a smaller sheet, use two to ensure everything gets crispy.
