- 1.5 lbs russet potatoes, scrubbed and cut into 1/2-inch thick fries
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lb cod fillets (or haddock/tilapia), about 4-6 oz each
- 1/2 cup panko breadcrumbs
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon paprika
- Lemon wedges, for serving
- Tartar sauce or malt vinegar, for serving
Preparation
Step 1
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Step 2
In a large bowl, toss the potato fries with 1 tablespoon of olive oil, garlic powder, onion powder, salt, and pepper. Spread potatoes in a single layer on one half of the prepared baking sheet. Roast for 15 minutes.
Step 3
While potatoes roast, prepare the fish: Pat fish fillets very dry with paper towels. In a shallow dish, combine panko breadcrumbs and paprika.
Step 4
In a separate small bowl, melt butter and stir in the remaining 1 tablespoon of olive oil. Brush both sides of each fish fillet with the butter mixture, then dredge in the panko mixture, pressing to coat evenly.
Step 5
After the potatoes have roasted for 15 minutes, carefully remove the baking sheet from the oven. Flip the potatoes. Place the breaded fish fillets on the other half of the baking sheet, ensuring there's space between pieces.
Step 6
Return the baking sheet to the oven and bake for another 12-15 minutes, or until the fish is flaky and cooked through (internal temperature 145°F/63°C) and the potatoes are golden and crispy.
Step 7
Serve immediately with lemon wedges, tartar sauce, or malt vinegar.

- For extra crispy fries, soak them in cold water for 30 minutes before seasoning and pat dry completely.
- Don't overcrowd the pan; use two baking sheets if necessary for better crisping.
