- 1 tbsp olive oil
- 1 tbsp butter
- 1 lb large shrimp, peeled and deveined (tails on or off)
- 4 cloves garlic, minced
- 1 head broccolini, trimmed and cut into 1-inch pieces
- 1/4 cup chicken or vegetable broth
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp cornstarch (mixed with 1 tbsp water)
- Freshly ground black pepper to taste
- Red pepper flakes, to taste (optional)
- Cooked rice or noodles, for serving
Preparation
Step 1
Heat olive oil and butter in a large skillet or wok over medium-high heat until butter is melted and shimmering.
Step 2
Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and just cooked through. Remove shrimp from the skillet and set aside.
Step 3
Add minced garlic and broccolini to the same skillet. Stir-fry for 3-4 minutes, until broccolini is bright green and slightly tender-crisp. If needed, add a splash of water to help steam the broccolini.
Step 4
In a small bowl, whisk together chicken broth, soy sauce, and cornstarch slurry. Pour the sauce into the skillet with the broccolini, stirring constantly until the sauce thickens, about 1 minute.
Step 5
Return the cooked shrimp to the skillet and toss to coat with the sauce. Season with black pepper and red pepper flakes (if using).
Step 6
Serve immediately over cooked rice or noodles.
Tips
- Don't overcook the shrimp! They cook very quickly and can become rubbery if left on the heat too long.
- If you don't have broccolini, regular broccoli florets or even snap peas would be delicious here.
