Imagine dinner with minimal cleanup and maximum flavor – that's what these Garlic Butter Salmon & Veggie Foil Packets deliver! Everything cooks together beautifully in its own little steam pouch, resulting in flaky salmon and tender vegetables infused with aromatic garlic butter. Ingredients
Yield: 4 servings
Main
- 4 (6 oz) salmon fillets
- 1 lb asparagus, trimmed
- 1 pint cherry tomatoes, halved
- 1/2 lemon, thinly sliced
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
Preparation
Step 1
Preheat oven to 400°F (200°C) or grill to medium-high heat. Cut four large (about 12x18 inch) pieces of aluminum foil.
Step 2
In a small bowl, whisk together melted butter, minced garlic, chopped parsley, salt, and pepper.
Step 3
Divide the asparagus, cherry tomatoes, and salmon fillets evenly among the four foil pieces. Place a few lemon slices on top of each salmon fillet.
Step 4
Drizzle the garlic butter mixture evenly over the salmon and vegetables in each packet.
Step 5
Bring the long sides of the foil together and fold down tightly, then fold in the short sides to create a sealed packet. Ensure there's a little room inside for steam to circulate.
Step 6
Bake on a baking sheet or grill directly for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time may vary slightly depending on salmon thickness and oven/grill temperature.
Step 7
Carefully open the packets (watch out for steam!) and serve immediately, perhaps with a side of rice or quinoa.
Tips
- You can swap asparagus for other quick-cooking veggies like zucchini, green beans, or thin-sliced bell peppers.
- Ensure packets are sealed tightly to trap all the delicious steam and flavor.
- These are fantastic for meal prep; assemble them ahead of time and cook when ready!
