Ingredients

Salad

  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (15-oz) can corn, drained, or 1.5 cups frozen corn, thawed (or cooked fresh)
  • 1 red bell pepper, finely diced
  • 1/2 red onion, finely diced
  • 1/2 cup fresh cilantro, chopped

Dressing

  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1/2 tsp chili powder (optional)
  • Salt and black pepper to taste

Preparation

  1. Step 1

    In a large bowl, combine the rinsed black beans, corn, diced red bell pepper, diced red onion, and chopped cilantro.

    In a small bowl, whisk together the olive oil, fresh lime juice, ground cumin, chili powder (if using), salt, and black pepper until well combined.

  3. Step 3

    Pour the dressing over the salad ingredients. Toss gently until everything is evenly coated.

    Taste and adjust seasonings as needed. For best flavor, cover and refrigerate for at least 30 minutes to allow the flavors to meld. This salad tastes even better the next day!
