Ingredients

- 1.5 lbs boneless, skinless chicken breasts or thighs, sliced into 1/2-inch strips
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow onion, thinly sliced
- 2 tbsp olive oil
- 2 tbsp fajita seasoning (store-bought or homemade blend of chili powder, cumin, paprika, garlic powder, onion powder, salt, pepper)
- Warm tortillas, for serving
- Optional toppings: salsa, sour cream, guacamole, shredded cheese, fresh cilantro, lime wedges
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
Step 2
In a large bowl, combine the sliced chicken, red bell pepper, green bell pepper, and yellow onion. Drizzle with olive oil and sprinkle generously with fajita seasoning. Toss well to ensure everything is evenly coated.
Step 3
Spread the chicken and vegetables in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan, as this helps everything cook evenly and get a nice char.
Step 4
Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp and slightly charred around the edges. Halfway through cooking (around the 10-12 minute mark), give everything a good stir.
Step 5
While the fajitas are baking, warm your tortillas according to package directions.
Step 6
Remove from oven and serve immediately with warm tortillas and your favorite fajita toppings.

- For a spicier kick, add a pinch of cayenne pepper to your fajita seasoning.
- Leftovers make excellent salads or grain bowls the next day!
