- 8 corn tortillas
- 1 tbsp olive oil, plus more for brushing
- 1 lb boneless, skinless chicken breast or thighs, cooked and shredded
- 1 packet (1 oz) taco seasoning
- 1/2 cup water
- 1 (16 oz) can refried beans
- Toppings (suggestions): Shredded lettuce, diced tomatoes, diced avocado, shredded cheddar or Monterey Jack cheese, sour cream or Greek yogurt, salsa, pickled jalapeños
Preparation
Step 1
Preheat oven to 375°F (190°C). Lightly brush both sides of each corn tortilla with olive oil. Place them in a single layer on a large baking sheet (you may need two).

Bake tortillas for 8-10 minutes, flipping halfway through, until golden brown and crispy. Watch them closely as they can burn quickly. Remove from oven and set aside.

While tortillas are baking, heat 1 tbsp olive oil in a skillet over medium heat. Add shredded cooked chicken, taco seasoning, and 1/2 cup water. Simmer for 5-7 minutes, stirring occasionally, until the liquid has mostly absorbed and the chicken is well coated with seasoning.

In a small saucepan, gently warm the refried beans over low heat, stirring occasionally, until heated through.

Assemble the tostadas: Spread a thin layer of warm refried beans on each crispy tortilla. Top with a spoonful of seasoned chicken, then add your desired toppings like lettuce, tomato, avocado, and cheese.
