- 2 large sweet potatoes (about 1.5 lbs), peeled and cut into 1/2-inch dice
- 4 cups broccoli florets
- 2 tbsp olive oil
- 1 small red onion, thinly sliced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper (optional, for a kick)
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Preparation
Step 1
Heat olive oil in a large (12-inch) skillet with a lid over medium-high heat.

Add the diced sweet potatoes to the hot skillet, spreading them in a single layer as much as possible. Cook, undisturbed, for 5-7 minutes until they start to brown and crisp up on the bottom.
Step 3
Stir the sweet potatoes, then add the sliced red onion. Cook for another 3-4 minutes, stirring occasionally, until the onion softens.

Stir in the minced garlic, smoked paprika, dried oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant. Season with salt and black pepper.

Add the broccoli florets to the skillet. Pour in about 1/4 cup of water or vegetable broth. Cover the skillet with the lid and cook for 5-7 minutes, or until the broccoli is tender-crisp and bright green.
Step 6
Remove the lid and continue to cook for another 2-3 minutes, stirring occasionally, allowing any remaining liquid to evaporate and the sweet potatoes to get extra crispy. Taste and adjust seasoning as needed.
Step 7
Garnish with fresh chopped parsley and serve hot. Excellent on its own or topped with a fried egg!
