Salmon
- 2 (6 oz) salmon fillets, skin on or off
- 1 tbsp olive oil
- Salt and black pepper to taste
- 2 tbsp sweet chili sauce, plus more for drizzling
Bowls
- 1 cup cooked rice (brown or white)
- 1 cup shredded purple cabbage
- 1/2 cucumber, thinly sliced
- 1/2 avocado, sliced
- 1 carrot, shredded
- 1 tbsp toasted sesame seeds, for garnish
- Fresh cilantro, chopped, for garnish
Preparation
Step 1
Pat salmon fillets dry with paper towels. Season lightly with salt and pepper. Heat olive oil in a non-stick skillet over medium-high heat. Once hot, place salmon skin-side down (if skin-on).
Step 2
Cook salmon for 4-5 minutes on the first side until the skin is crispy and golden. Flip, then brush the top with 2 tablespoons of sweet chili sauce. Cook for another 3-5 minutes, or until the salmon is cooked through and flakes easily with a fork (internal temperature of 145°F/63°C).
Step 3
While salmon cooks, prepare your bowls. Divide the cooked rice between two serving bowls. Arrange the shredded cabbage, sliced cucumber, sliced avocado, and shredded carrot alongside the rice.
Step 4
Once cooked, carefully transfer the sweet chili salmon to the prepared bowls.
Step 5
Garnish with toasted sesame seeds and fresh cilantro. Drizzle with a little extra sweet chili sauce, if desired, and serve immediately.
Tips
- For an extra kick, add a dash of sriracha to your sweet chili sauce.
- Feel free to customize your veggies! Edamame, bell peppers, or snap peas would also be delicious.
- If you don't have sweet chili sauce, a mix of honey, soy sauce, and a touch of sriracha works well.
