Crispy Chicken

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1/4 cup cornstarch
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil

Sweet Chili Sauce

  • 1/2 cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger (optional)

For Serving

  • Cooked rice
  • Chopped green onions
  • Sesame seeds (optional)
  • Steamed broccoli or bell pepper strips (optional)

Preparation

  1. Step 1

    In a medium bowl, toss the chicken pieces with cornstarch, garlic powder, salt, and pepper until evenly coated.

    In a separate small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, and ginger (if using). Set aside.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer, working in batches if necessary to avoid overcrowding the pan. Cook for 3-5 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.

    Reduce heat to medium. Pour the sweet chili sauce mixture into the skillet. Bring to a gentle simmer, stirring occasionally, until the sauce slightly thickens, about 2-3 minutes.

    Return the cooked chicken to the skillet, tossing to coat evenly in the sauce. Cook for 1-2 minutes until chicken is well coated and heated through.

    Serve immediately over cooked rice, garnished with chopped green onions and sesame seeds. Add steamed vegetables if desired.
