- 1/2 cup sweet chili sauce

- 1 tbsp rice vinegar
- 1 tsp grated fresh ginger (optional)

Preparation
Step 1
In a medium bowl, toss the chicken pieces with cornstarch, garlic powder, salt, and pepper until evenly coated.

In a separate small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, and ginger (if using). Set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer, working in batches if necessary to avoid overcrowding the pan. Cook for 3-5 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.

Reduce heat to medium. Pour the sweet chili sauce mixture into the skillet. Bring to a gentle simmer, stirring occasionally, until the sauce slightly thickens, about 2-3 minutes.
