- 3 cups finely chopped broccoli florets (from about 1 large head)
- ½ cup finely grated Parmesan cheese
- ½ cup all-purpose flour
- 2 large eggs, lightly beaten
- 2 tbsp milk
- 2 cloves garlic, minced
- ½ tsp onion powder
- ¼ tsp salt
- Pinch of black pepper
- 2-3 tbsp olive oil (for frying)
Optional Dipping Sauce
- ½ cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tbsp fresh dill, chopped
- Salt and pepper to taste
Preparation
Step 1
Bring a small pot of salted water to a boil. Add the finely chopped broccoli and blanch for 2-3 minutes, just until vibrant green and slightly tender-crisp. Drain well and immediately plunge into an ice bath to stop cooking. Once cooled, drain again and squeeze out as much excess water as possible using a clean kitchen towel or paper towels. This is key for crispy fritters!
Step 2
In a large bowl, combine the dried broccoli with Parmesan cheese, flour, beaten eggs, milk, minced garlic, onion powder, salt, and pepper. Mix until just combined. The mixture will be thick.
Step 3
Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Drop spoonfuls (about 2 tablespoons each) of the broccoli mixture into the hot skillet, gently flattening them into patties.
Step 4
Cook for 3-5 minutes per side, until golden brown and crispy. Add more olive oil if needed. Transfer cooked fritters to a plate lined with paper towels to drain any excess oil.

While the fritters cook, prepare the optional dipping sauce: In a small bowl, whisk together Greek yogurt, lemon juice, dill, salt, and pepper.

Serve the crispy fritters warm with the lemon-dill dipping sauce.
