Ingredients

Yield: 4 servings

Main

  • 4 boneless pork chops, 3/4-inch thick (about 1.5 lbs total)
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 large egg, whisked
  • 2 tbsp milk or water
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 3 tbsp olive oil or neutral oil

Preparation

  1. Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top. Drizzle or brush the wire rack with 1 tbsp of olive oil.

  2. Step 2

Pat pork chops dry with paper towels. Season both sides generously with salt and black pepper.

  3. Step 3

Set up a breading station: In a shallow dish, combine flour, garlic powder, onion powder, and smoked paprika. In a second shallow dish, whisk the egg with milk/water. In a third shallow dish, combine panko breadcrumbs and Parmesan cheese (if using).

  4. Step 4

Dredge each pork chop first in the flour mixture, shaking off excess. Then dip in the egg wash, allowing excess to drip off. Finally, press firmly into the panko mixture, ensuring it's fully coated. Repeat for all chops.

  5. Step 5

Heat the remaining 2 tbsp of olive oil in a large oven-safe skillet (like cast iron) over medium-high heat. Once shimmering, add the breaded pork chops and sear for 2-3 minutes per side until golden brown.

  6. Step 6

Carefully transfer the skillet directly to the preheated oven (if using an oven-safe skillet) OR transfer the seared chops to the prepared wire rack on the baking sheet. Bake for 8-12 minutes, or until the internal temperature reaches 145°F (63°C) with a meat thermometer. Cooking time will vary based on thickness.

  7. Step 7

Remove from oven and let rest for 5 minutes before serving. This allows the juices to redistribute, keeping the chops extra tender.

Tips

  • Make sure to pat the pork chops very dry before breading; this helps the coating stick better.
  • Don't overcrowd the skillet when searing; work in batches if necessary to get a good crust.
  • Serve with mashed potatoes and green beans for a classic, comforting meal.
