Crispy Oven-Baked Chicken Thighs with Rosemary

Say goodbye to dry chicken! These oven-baked chicken thighs deliver incredible crispiness on the outside and tender, juicy meat on the inside. With just a few simple seasonings, you'll have a family-favorite meal ready in no time.

Ingredients

Yield: 4 servings

Main

  • 4-6 bone-in, skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation

  1. Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.

  2. Step 2

Pat the chicken thighs very dry with paper towels. This is key for crispy skin!

  3. Step 3

In a small bowl, whisk together the olive oil, rosemary, minced garlic, paprika, salt, and pepper.

  4. Step 4

Place the chicken thighs on the prepared baking sheet. Rub the seasoning mixture all over the chicken, making sure to get some under the skin if desired.

  5. Step 5

Bake for 25-35 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is deeply golden and crispy. Cooking time will vary depending on the size of your thighs.

  6. Step 6

Let the chicken rest for 5 minutes before serving to allow the juices to redistribute. Serve with your favorite side dishes!

Tips

  • Make sure to pat the chicken completely dry for the crispiest skin.
  • For even crispier skin, elevate the chicken on a wire rack set inside the baking sheet.
  • Add lemon slices to the pan during the last 10 minutes of cooking for extra brightness.
