Ingredients

Yield: 4 servings

Main

  • 2 lbs small potatoes (such as Yukon Gold or red baby potatoes), quartered
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • Pinch of red pepper flakes (optional)

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup, or lightly grease it.

  2. Step 2

In a large bowl, combine the quartered potatoes, olive oil, minced garlic, dried oregano, lemon zest, salt, pepper, and red pepper flakes (if using). Toss well to ensure all potatoes are evenly coated.

  3. Step 3

Spread the potatoes in a single layer on the prepared baking sheet. Make sure they are not overcrowded; use two baking sheets if necessary to ensure crispiness.

  4. Step 4

Roast for 25-30 minutes, flipping halfway through, until the potatoes are tender on the inside and beautifully golden brown and crispy on the outside.

  5. Step 5

Remove from the oven. Drizzle with lemon juice and sprinkle with fresh parsley. Toss gently to combine.

  6. Step 6

Serve immediately as a delicious side dish to your favorite protein.

Tips

  • For extra crispy potatoes, soak the cut potatoes in cold water for 15-20 minutes, then drain and pat very dry before tossing with oil and spices.
  • Don't skip the single layer; crowding the pan will steam the potatoes instead of crisping them.
  • You can add other herbs like rosemary or thyme along with the oregano for a different flavor profile.
