  • 4 bone-in, skin-on chicken thighs
  • 1 tbsp olive oil, plus more for veggies
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 1 lb baby carrots, peeled
  • 1 lb small red potatoes, quartered
  • 1 large sweet potato, peeled and cubed
  • 1 tbsp fresh rosemary, chopped (optional)

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels. In a small bowl, mix together paprika, garlic powder, thyme, salt, and pepper.

    Rub chicken thighs with 1 tbsp olive oil, then generously season all over with the spice mixture. Set aside.
