Crispy Baked Pork Tenderloin

Pork tenderloin is one of those cuts that feels fancy but is incredibly easy to cook, and this recipe takes it to the next level. We're getting a beautiful crispy exterior while keeping the inside tender and juicy – all with minimal fuss. It's elegant enough for guests but simple enough for any weeknight.

Ingredients

Yield: 4 servings

Main

  • 1.5 lb pork tenderloin
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Optional Glaze

  • 2 tbsp Dijon mustard
  • 1 tbsp maple syrup or honey

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

  2. Step 2

Pat the pork tenderloin dry with paper towels – this helps achieve that crispy crust! Trim any silver skin if present.

  3. Step 3

In a small bowl, combine smoked paprika, garlic powder, onion powder, dried thyme, salt, and pepper. Rub the olive oil all over the tenderloin, then generously sprinkle and rub the spice mixture over the entire surface.

  4. Step 4

Place the seasoned tenderloin on the prepared baking sheet. If making the optional glaze, whisk together Dijon mustard and maple syrup/honey, then brush over the pork.

  5. Step 5

Bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C) with a meat thermometer. The outside should be beautifully browned and crispy.

  6. Step 6

Remove from oven, tent loosely with foil, and let rest for 5-10 minutes before slicing. This allows the juices to redistribute, keeping the pork moist and tender.

Tips

  • Don't skip patting the tenderloin dry! Moisture is the enemy of a crispy crust.
  • Use a meat thermometer for perfect results – overcooked pork tenderloin can be dry.
  • For a complete meal, roast some chopped vegetables like Brussels sprouts or potatoes alongside the pork on the same pan.
