  • 1 lb large shrimp, peeled and deveined, tails on or off
  • 1/2 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 1/2 cups panko breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil (for drizzling)

  • Lemon wedges
  • Cocktail sauce or tartar sauce

Preparation

  1. Step 1

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.

    Pat shrimp very dry with paper towels. Set up your breading station: one shallow dish with flour, one with beaten eggs, and a third with panko breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper.

    Working one at a time, dredge each shrimp in flour, shaking off excess. Dip into egg, letting excess drip off. Finally, press into the panko mixture, ensuring it's fully coated.

    Arrange coated shrimp in a single layer on the prepared baking sheet. Drizzle lightly with olive oil.

  5. Step 5

    Bake for 8-12 minutes, flipping halfway through, until shrimp are pink, opaque, and the panko is golden brown and crispy. Cooking time will vary depending on shrimp size.

  6. Step 6

    Serve immediately with lemon wedges and your favorite dipping sauce.

  • Ensure shrimp are very dry before breading; this helps the coating stick better and get crispier.
