- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 yellow onion, chopped
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup sun-dried tomatoes (oil-packed), drained and sliced
- 3 cups fresh spinach
- 1/4 cup grated Parmesan cheese
- Pinch of red pepper flakes (optional)
- Fresh basil, chopped, for garnish (optional)
Preparation
Step 1
Season the chicken pieces with salt and pepper. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
Step 2
Add chopped onion to the skillet and cook for 3-4 minutes until softened. Stir in minced garlic and cook for 1 minute until fragrant. If using, add a pinch of red pepper flakes.
Step 3
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Bring to a simmer, then stir in the heavy cream and sliced sun-dried tomatoes.
Step 4
Return the cooked chicken to the skillet. Reduce heat to low and add the fresh spinach a handful at a time, allowing it to wilt before adding more. Cook until all the spinach is wilted.
Step 5
Stir in the Parmesan cheese until melted and the sauce is smooth and creamy. Taste and adjust seasoning as needed.
Step 6
Serve immediately over pasta, rice, or with crusty bread for dipping. Garnish with fresh basil if desired.
