Get ready for a dinner that feels fancy but is surprisingly simple to make! This Creamy Tomato and Spinach Chicken takes humble chicken breasts and transforms them into something truly special with a rich, flavorful sauce.
Ingredients
Yield: 4 servings
Main
- 2 boneless, skinless chicken breasts (about 1.5 lbs total), sliced horizontally to make 4 thinner cutlets
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 2 cups fresh spinach
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper to taste
- Fresh basil or parsley, chopped, for garnish
Preparation
Step 1
Season chicken cutlets generously with salt and pepper.
Step 2
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
Step 3
Reduce heat to medium. Add butter to the skillet. Once melted, add chopped onion and cook until softened, about 5 minutes. Add minced garlic and oregano, and cook for 1 minute until fragrant.
Step 4
Stir in the diced tomatoes (with their juice) and chicken broth. Bring to a simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly.
Step 5
Stir in the heavy cream and fresh spinach. Cook, stirring gently, until the spinach wilts down, about 2-3 minutes. Season the sauce with salt and pepper to taste.
Step 6
Return the cooked chicken to the skillet, nestling it into the sauce. Simmer for another 2-3 minutes to heat through. Garnish with fresh basil or parsley and serve hot, perhaps over pasta, rice, or with crusty bread.
Tips
- Slicing the chicken breasts horizontally helps them cook faster and absorb more flavor from the sauce.
- Don't be afraid to let the sauce simmer; it helps deepen the flavors.
- This sauce is also fantastic with pasta or rice to soak up all the deliciousness.
