  • 2 boneless, skinless chicken breasts (about 1.5 lbs total), sliced horizontally to make 4 thinner cutlets
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley, chopped, for garnish

Preparation
