  • 12 oz linguine or fettuccine
  • 1 tbsp olive oil
  • 1 lb large shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1/2 small onion or 1 shallot, finely diced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped, for garnish

Preparation

  1. Step 1

    Cook the pasta according to package directions in well-salted water. Before draining, reserve 1/2 cup of the starchy pasta water. Drain and set aside.

    While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.

    Add diced onion (or shallot) to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.

    Pour in the diced tomatoes (with their juice) and chicken broth. Bring to a simmer, stirring occasionally, and cook for 5-7 minutes to allow flavors to meld and sauce to thicken slightly.

    Reduce heat to low. Stir in the heavy cream, Parmesan cheese, and dried oregano. Season with salt and black pepper to taste. If the sauce is too thick, add a splash of the reserved pasta water.

  6. Step 6

    Add the cooked shrimp and drained pasta to the skillet. Toss gently to coat everything evenly in the creamy sauce.

    Serve immediately, garnished with fresh basil or parsley and extra grated Parmesan cheese.
