Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1.5 lbs boneless, skinless chicken breasts (about 2-3), halved horizontally to create thinner cutlets
- ½ tsp salt
- ¼ tsp black pepper
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- ½ cup chicken broth
- ½ cup heavy cream
- 5 oz fresh spinach
- ¼ cup grated Parmesan cheese, plus more for serving
- Fresh basil or parsley, chopped, for garnish (optional)
Preparation
Step 1
Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
Step 2
Add diced onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
Step 3
Pour in diced tomatoes (with their juices) and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pan. Let simmer for 5 minutes to allow flavors to meld.
Step 4
Reduce heat to low. Stir in heavy cream and fresh spinach, cooking until the spinach wilts, about 2-3 minutes. Stir in Parmesan cheese until melted and the sauce is smooth.
Step 5
Return the cooked chicken to the skillet, nestling it into the sauce. Simmer for another 2-3 minutes to heat through.
Step 6
Serve immediately, garnished with fresh basil or parsley and extra Parmesan cheese, if desired. Delicious with rice, pasta, or crusty bread.
Tips
- For a tangier sauce, add a splash of balsamic vinegar with the tomatoes.
- If you don't have heavy cream, you can use half-and-half or even milk, though the sauce will be thinner.
- Slice the cooked chicken breasts before returning them to the pan for easier serving.
