  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces

  • 2 tbsp unsalted butter
  • 1/2 yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1.5 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese, plus more for garnish
  • 5 oz fresh spinach
  • Red pepper flakes, optional, for a hint of heat

Preparation

  1. Step 1

    Pat chicken dry with paper towels. Season chicken with garlic powder, Italian seasoning, salt, and pepper.

    Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook for 5-7 minutes, stirring occasionally, until browned on all sides and cooked through. Remove chicken from skillet and set aside.
