- 2 cloves garlic, minced
- 1/2 cup chicken broth or vegetable broth
- 1/4 cup heavy cream
- Juice of 1/2 lemon (about 1.5 tbsp)
- 2 tbsp fresh dill, chopped, plus more for garnish
- 4 cups fresh spinach
- Lemon wedges, for serving
Preparation
Step 1
Pat salmon fillets dry with paper towels and season generously with salt and pepper on both sides.

Heat olive oil in a large skillet over medium-high heat. Once hot, add salmon fillets, skin-side down if applicable. Cook for 4-5 minutes until skin is crispy (if skin-on) and salmon is lightly browned. Flip and cook for another 3-5 minutes, or until salmon is cooked through to your desired doneness and flakes easily with a fork. Remove salmon from the skillet and set aside on a plate.

Reduce heat to medium. Add butter to the same skillet. Once melted, add minced shallot and cook for 2-3 minutes until softened. Stir in minced garlic and cook for 1 minute until fragrant.

Pour in chicken broth and bring to a gentle simmer, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes until slightly reduced.

Stir in heavy cream, lemon juice, and fresh dill. Bring back to a gentle simmer and cook for 1-2 minutes, until the sauce slightly thickens. Taste and adjust seasoning with salt and pepper as needed.
Step 6
Add fresh spinach to the skillet and cook, stirring, until wilted, about 1-2 minutes. Return salmon fillets to the skillet, nestling them into the sauce and spinach.
Step 7
Serve immediately, garnished with extra fresh dill and lemon wedges.
