Looking for a dinner that feels fancy but requires minimal effort? This Creamy Lemon Dill Salmon Sheet Pan is your new go-to! Flaky salmon, vibrant asparagus, and tender potatoes all roast together on one pan, coated in a bright, creamy sauce. It's a healthy, delicious meal that comes together beautifully with easy cleanup.
Ingredients
Yield: 4 servings
Main
- 4 (6 oz) salmon fillets
- 1 lb baby potatoes, halved or quartered
- 1 bunch asparagus, woody ends trimmed
- 1 tbsp olive oil
- Salt and black pepper to taste
- For the Sauce:
- 1/4 cup heavy cream
- 2 tbsp fresh lemon juice
- 1 tbsp fresh dill, chopped
- 1 clove garlic, minced
- 1/2 tsp Dijon mustard
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2
Toss the halved potatoes with 1/2 tbsp olive oil, salt, and pepper. Spread them in a single layer on one side of the prepared baking sheet. Roast for 15 minutes.
Step 3
While potatoes roast, prepare the sauce: In a small bowl, whisk together heavy cream, lemon juice, fresh dill, minced garlic, and Dijon mustard. Season with a pinch of salt and pepper.
Step 4
Remove the baking sheet from the oven. Arrange salmon fillets on the other side of the pan. Toss asparagus with the remaining 1/2 tbsp olive oil, salt, and pepper, and add to the pan around the salmon and potatoes.
Step 5
Spoon the creamy lemon dill sauce generously over each salmon fillet. Return the baking sheet to the oven and roast for another 10-15 minutes, or until salmon is cooked through and flakes easily, and vegetables are tender-crisp.
Step 6
Serve immediately, spooning any extra sauce from the pan over the salmon and vegetables.
Tips
- Instead of potatoes, you can use sweet potato cubes or broccoli florets.
- Ensure salmon fillets are roughly the same thickness for even cooking.
