  • 4 (6 oz) salmon fillets
  • 1 lb baby potatoes, halved or quartered
  • 1 bunch asparagus, woody ends trimmed
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • For the Sauce:
  • 1/4 cup heavy cream
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 clove garlic, minced
  • 1/2 tsp Dijon mustard

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  2. Step 2

    Toss the halved potatoes with 1/2 tbsp olive oil, salt, and pepper. Spread them in a single layer on one side of the prepared baking sheet. Roast for 15 minutes.

    While potatoes roast, prepare the sauce: In a small bowl, whisk together heavy cream, lemon juice, fresh dill, minced garlic, and Dijon mustard. Season with a pinch of salt and pepper.

  4. Step 4

    Remove the baking sheet from the oven. Arrange salmon fillets on the other side of the pan. Toss asparagus with the remaining 1/2 tbsp olive oil, salt, and pepper, and add to the pan around the salmon and potatoes.

  5. Step 5

    Spoon the creamy lemon dill sauce generously over each salmon fillet. Return the baking sheet to the oven and roast for another 10-15 minutes, or until salmon is cooked through and flakes easily, and vegetables are tender-crisp.

  6. Step 6

    Serve immediately, spooning any extra sauce from the pan over the salmon and vegetables.

  • Instead of potatoes, you can use sweet potato cubes or broccoli florets.
