  • 1 lb boneless, skinless chicken breasts, sliced horizontally into 1/2-inch thick cutlets
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • Juice of 1/2 lemon (about 1 1/2 tbsp)
  • 2 tbsp fresh dill, chopped
  • Optional: 1/4 cup grated Parmesan cheese
  • Fresh parsley or extra dill, for garnish

Preparation

  1. Step 1

    Season both sides of the chicken cutlets generously with salt and black pepper.

    Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
