Who says sophisticated flavors can't be easy? These Creamy Lemon Dill Chicken Cutlets are a testament to that! Thinly sliced chicken cooks up in a flash, then gets draped in a luxurious, zesty sauce infused with fresh dill and bright lemon. It's a dish that feels fancy but is totally approachable for any night of the week.
Ingredients
Yield: 4 servings
Main
- 1.5 lbs boneless, skinless chicken breasts, horizontally sliced into 1/2-inch thick cutlets
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp butter
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup fresh dill, chopped
- Juice of 1/2 lemon
- Lemon slices, for garnish (optional)
Preparation
Step 1
Pat chicken cutlets dry with paper towels. In a shallow dish, combine flour, salt, and pepper. Dredge each chicken cutlet in the flour mixture, shaking off any excess.
Step 2
Heat olive oil and butter in a large skillet over medium-high heat until the butter is melted and foamy. Add the floured chicken cutlets in a single layer (you may need to work in batches) and cook for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from the skillet and set aside on a plate.
Step 3
Reduce heat to medium. Pour chicken broth into the skillet, scraping up any browned bits from the bottom with a wooden spoon. Bring to a simmer, then stir in the heavy cream. Cook for 2-3 minutes, stirring occasionally, until the sauce slightly thickens.
Step 4
Remove skillet from heat. Stir in the fresh dill and lemon juice. Return the cooked chicken cutlets to the skillet, spooning the creamy sauce over top.
Step 5
Serve immediately, garnished with fresh lemon slices if desired. Excellent with rice, pasta, or roasted vegetables.
Tips
- To ensure even cooking, make sure your chicken cutlets are all similar in thickness. You can gently pound thicker breasts between two pieces of plastic wrap.
- For an extra burst of freshness, add a sprinkle of fresh dill right before serving.
