  • 1.5 lbs boneless, skinless chicken breasts, sliced horizontally into thin cutlets
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh dill, chopped
  • Lemon wedges, for serving (optional)

Preparation

  1. Step 1

    Season chicken cutlets with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.

    Reduce heat to medium. Pour chicken broth into the skillet, deglazing the pan by scraping up any browned bits with a wooden spoon. Bring to a simmer.

    Whisk in the heavy cream, lemon juice, and Dijon mustard. Continue to simmer for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.

  4. Step 4

    Return the cooked chicken to the skillet, spooning the sauce over the chicken. Stir in fresh dill. Cook for another 1-2 minutes to heat through. Serve immediately with extra lemon wedges, if desired.

  • If you don't have fresh dill, you can use 1 teaspoon of dried dill, but fresh really makes this dish sing!
