Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts (2-3 large), pounded to ½-inch thickness
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ¼ cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley, for garnish

Preparation

  1. Step 1

Season both sides of the pounded chicken breasts with salt and pepper.

  2. Step 2

Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-6 minutes per side, or until golden brown and cooked through (internal temperature 165°F/74°C). Remove chicken from skillet and set aside.

  3. Step 3

Reduce heat to medium-low. Add butter to the skillet and let it melt. Add minced garlic and cook for 1 minute until fragrant, stirring constantly.

  4. Step 4

Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a gentle simmer, then stir in the heavy cream, Dijon mustard, and lemon juice. Continue to simmer for 2-3 minutes, until the sauce slightly thickens.

  5. Step 5

Return the cooked chicken to the skillet, turning to coat in the sauce. Spoon extra sauce over the chicken. Garnish with fresh parsley and serve immediately with rice, pasta, or mashed potatoes.

Tips

  • Pounding the chicken to an even thickness ensures it cooks evenly and quickly.
  • A splash of white wine can be added with the chicken broth for extra depth of flavor.
  • Serve with a simple side salad or roasted asparagus to complete the meal.
